Snails

Description

Known locally as cagouilles or lumas. Most prized are the Petit Gris, small snails with grey-brown shells, their delicious taste said to be due to the cognac imbued earth that they live on! About 2-3 cm, and weighing just 8-12 g, the Petit Gris are found wild as well as being farmed. Before being eaten the snails fast for 15 days and are then washed before tossed in salted vinegar water. Then they are washed again. They are served with garlic butter, a variety of sauces or cooked as a pot-au-feu.
